Today was one of those spring days that just makes you want to bake bread! I was out running errands and it was pouring and hailing and the water was running in rivers down the side of the road. I quickly hurried home and went into nesting mode. Days like these make me want to bake bread…the sweet aroma filling the house…warm bread with melted butter dripping into my mouth…yum!! So I decided to share my favorite recipe for rolls. Believe me when I say they are EASY!!! The results are fabulous…just sit back and enjoy the compliments…you may even become known for your rolls! Hehe!
Jiffy Rolls (for bread machine)
Into breadmaker pan:
½ c. scalded milk, ½ c. warm water
3 Tbs. oil, 1 egg
Add:
3 c. bread flour, 3 Tbs. white sugar
1 pkg yeast (2-1/4 tsp)
Do not mix. Turn the bread machine on the dough cycle. After the cycle is completed, remove the dough by turning it out onto oiled plate (I oil mine with a bit of Pam). Spray enough Pam on hands to keep dough from sticking. Pinch off a bit of dough (golf ball size for 18 rolls/larger to make 12) and roll into a ball. Place on greased cookie sheet. Cover and let rise in a warm place for 20 minutes or until doubled. Bake at 400 degrees for 8 to 10 minutes, until lightly browned.
The larger rolls make nice hamburger buns too! Your children will go nuts and you know the way to a man’s heart…This recipe was given to me by my cousin about 20 years ago and I adapted it to the bread machine because I love home-made, easy baking!

Mmm. Now I'm having a midnight snack craving...and I know there's a ziploc bag full of those downstairs right now. Oh so tempting...
(And thank goodness our shoes weren't ruined by the rain!!)
I don't have a bread machine, but I sure would like some fresh rolls! Yummm!!! Maybe when you move over here???
Hey, Victoria! I just got hooked up with Donna Lynn yesterday. Nice to meet the two of you! Yep, I'm over in Yakima, where it's supposed to be nice and warm, but I'm still freezing my toes off. Keep in touch! I LOVE your vintage tablecloth creations!

Those look SO YUMMY! Hot out of the oven (or bread machine!), with thick chunks of ice cold butter -- my hips put on another pound just THINKING about it.

Hi Victoria,
I've missed you this weekend sweetie. I was showing my hubby your blog and told him that you are moving to Nashville. We have been thinking about moving their too within the next 18 to 24 months. Can you tell me what made you choose Nashville? I am just curious. I love the city. I have been there a few times. Hope your weekend was restful.
Hugs,
LeAnn :)
